When I asked my youngest niece what she wanted on her birthday cake this year she quickly said “Pegasus!” followed with “and a unicorn, and a pony, and a unicorn Pegasus!” She turned 5 this year and what can I say, she knows what she likes! I bet you can guess what her favorite color is as well! I know that she was really hoping to get some toys on the top of her cake, like I’d done previously but I wanted to surprise her with something unexpected.
I first thought about a carousel because I could incorporate all of the horses and ponies and Pegasus but then I fell in love with the fondant Pegasus mold and changed my mind. These were so much fun to make and were my first fondant molded items. I was surprised how simple it was!
Terra’s favorite flavor is all things banana and so this cake was a layered banana cake with brown butter cream cheese frosting. I got the recipe from Sally’s Baking Addiction. This is one of my absolute favorite and go-to blogs for recipes! It tasted so delicious and the brown butter cream cheese frosting was a major hit!
For decorations, I used an airbrush to get a slight gradient on the cake which I think made the gold fondant decorations really pop! I painted each Pegasus differently so that no two were alike. I used an edible glue to make sure everything stayed put! I learned quickly that a little glue goes a long way! I wanted the carousel to turn and so I kept it on a turn-table which is certainly not my normal cake stand. Terra loved spinning it, sometime a little too fast. The Pegasus on top of the cake barely made it to the cake cutting! As with all of the cakes I make for my family, it was seriously fun and I learned a lot!
